I have been on a sweets kick lately! Honestly I know I always say this but once you let you guard down and start eating all the things, you body craves alllll the things.

My family came into town for the wedding and we were honestly just indulging. They were on vacation and I was stressed out so it resulted in eating all the sweets, ice cream etc. SO I decided to cut myself off to only homemade sweets. Which means I can share the recipe with you guys and create something low i ingredients, fake sugar FREE and actually delicious.

Banana Cream Superfood Popsicles

Banana Cream Superfood Popsicles

Ingredients

  • 1 can coconut milk {full fat, unsweetened}
  • 1/2 cup water
  • 1 tbsp chia seeds
  • 4 ripe bananas
  • 1/2 tsp vanilla extract
  • 1/4 cup dark chocolate chips
  • 1 tsp olive oil
  • 1/4 cup toasted coconut flakes {unsweetened}

Instructions

  1. In small bowl stir together coconut milk, water & chia seeds.
  2. Allow to sit for 15-20 minutes until mixture forms a bit of a gel like substance
  3. Add 2 ripe bananas, vanilla extract & chia mixture to blender.
  4. Blend until smooth 30 seconds or so.
  5. Slice up remaining bananas and add to popsicle molds.
  6. Fill molds with mixture and freeze over night.
  7. In separate bowl combine chocolate chips and olive oil, microwave until melted.
  8. Remove popsicles from molds and place on cutting board lined with wax paper.
  9. Drizzle melted chocolate over popsicles & sprinkle with coconut flakes.
  10. Freeze for 10-15 minutes until chocolate is hard
  11. Enjoy!
